Almond/Walnut Chocolate Protein Bar

I wanted to share my favorite home made protein bar recipe that I originally found on BodyRockTV.com. I tried so many different ones and most of them either tasted bad or the texture was just off. The first time when I made it according to the recipe it came out too oily, almost not holding up together. I changed few things around and made it perfect. We eat this protein bar as a dessert or when we need a little pick me up bite. I eat it quiet often when I get 11pm sweet cravings and I am about to go thru kids candy box! Or during the day when I am tempted to dip into their Goldfish stack. It’s really simple to put together, delicious and really good for you.

Ingredients:
1/4 cup coconut oil
1/3 cup almond or peanut butter
½ cup vanilla almond milk
1 cup vanilla protein powder (see note below)
2/3 cup almond meal flour
Handfull of coconut flakes

Chocolate toping:
2 tbsp chocolate chips
1 tbsp coconut oil
3 tbsp almonds or walnuts (chopped)

In a medium bowl melt almond or peanut butter, coconut oil, and milk. You can do it on the stove top or microwave. Add in the protein powder and almond meal flour, and mix well.

Press the mixture firmly into an 8×8 baking dish lined with parchment paper. Melt chocolate chips and coconut oil in a small dish, mixing together until smooth. Add coconut flakes. If you want to get more chewy and crunchy texture you can add handful of chopped walnuts or almonds as well.

Pour the chocolate mixture over the the protein powder mixture, then sprinkle with chopped almonds or walnuts.

I like the bar to be softer but if you like it to be more dense reduce the coconut oil by a bit and add some ground coconut (this will give you moisture that you need to bind it together but will make the bar firmer).

Put the baking dish in the freezer for 20 minutes, then take it out, cut it and store in the air tight container. Refrigerate.

Note: I use Shakeology vanilla protein powder but any vanilla protein powder will work. The protein powder you choose won’t change the overall taste of the bar. The reason why I like using Shakeology is because of all the superfoods and antioxidants that it contains. It makes this delicious guilt free dessert that much healthier!
