Lately, I have been experimenting in the kitchen trying to come up with different homemade protein snacks and healthy desserts. It is not always easy to replace sugar, flour and/or eggs and get something that actually tastes and looks good. Not as easy as I thought!

These flourless banana muffins are super easy to make and have only 4 ingredients (besides baking soda). These babies are little shy of 100 calories each (+\- toppings), they are moist, chocolaty and oh so yummy. Perfect for pre or post workout bite, afternoon snack or even breakfast. And because these muffins contain fat and fructose, eating them won’t spike up your blood sugar (same as if you are eating fruit + nuts).
Gluten Free Banana Muffins
4 bananas @wholefoods
6 tbs of almond butter @costco
2 tbs of raw cacao beans @therawfoodworld
3 tbs of almond flour @bobsredmill
1/2 tsp of baking soda
Blend all ingredients in Vitamix (or your blender) until smooth. Distribute the batter among cupcake cups equally, add toppings if you like, and bake for about 13-15 min at 350. Let it cool completely before serving. Store in the air tight container on the rooms temperature and enjoy over the next few days.
Note: if you would like to use unsweetened cocoa, you can, use 4 tbs, all other measurements remain the same.
