Unstuffed Stuffed Peppers 

I love when my husband goes grocery shopping but sometimes he comes home with random foods. Few weeks ago he showed up with couple ready to eat meals from the freezer section. Now, knowing that I cook daily, you can imagine my face! He said, it is for the times when I am not around. Which is never! I love how he tries to trick me into things 🙂 

The packaged meal actually looked good, the label was clean and I “semi” approved it. 

So the other night, kids and I had dinner early and my husband decided to have “his meal”. It was the unstuffed stuffed pepper dish with an unusual ingredient. Steal cut oats instead of rice. Talk about smart rice replacement! I was really impressed by the cleverness of this meal company. 

Naturally, because I love experimenting in the kicthen, I decided to recreate this meal. I scanned the ingredient list and the most amazing dish was born! 

Gluten free unstuffed stuffed peppers! Creamy, tasty and oh so good! 


1.5 lbs of ground turkey 

1/2 cup of gluten free steel cut oats 

2 bell peppers (red and yellow or red and orange – chopped)

1 large yellow onion (chopped)

5-6 garlic cloves (chopped)

6 whole peeled canned tomatoes (you can use fresh as well, just boil and peel before; crush the tomatoes with hands)

1 cup of tomato sauce (you can use the sauce from the tomatoes above)

1 tbs of tomato paste 

1.5 tsp of dried oregano 

1 tsp of dried parsley

1.5 tsp of Himalayan salt 

1/2 tsp of black pepper 

Olive oil (enough to coat the bottom of the pot you are using)

Fresh parsley for serving 


Add olive oil to the pot and when hot add all chopped vegetables except for the tomatoes. Sautée until onion is translucent. Add ground turkey and cook another few minutes until meat turns white. Add tomatoes paste and cook for another minute. Add steal cut oats, crushed tomatoes, tomato sauce and all spices. Stir, cover and cook for another 25-35 minutes. The oats should be cooked thru at this point and most of the liquid should be evaporated.

Serve with fresh parsley on top and enjoy! 

This dish is yummy the next day as well. Add a sunny side egg on top and call it a day 🙂 And that is exactly what I am having for lunch tomorrow!
